I’ve eliminated a bits nut products on the baking for Memorial Day time weekend. Today I made Mini Lamingtons, and also a Sour Cream Chocolate Cake I just love lamingtons, they’re a flavor of home for me personally. An extremely traditional Australian spongy cake, dipped in chocolate and then coconut. Messy to make, but worth it.

I came across this recipe for the Mini Lamingtons in the cuisine section of the Sydney Morning Herald and I simply converted it to imperial measurements and quiche courgette it worked really well.

1 stick soft butter, chopped

3/4 cup super fine sugar

1/2 tsp vanilla extract

1/2 tsp vanilla extract

4 tablespoons Dutch cocoa

5 ounces boiling water

Preheat oven to 350F.9 years ago

Using a power mixer, beat butter, sugars and vanilla until light and creamy. Add eggs one at a time, beating well after every. Stir in combined sifted flour and baking natural powder alternating with dairy and mix until soft. Spoon mixture right into a greased and lined square tin and bake for 25-30 moments or until cooked when tested having a skewer. Stand in tin for 10 minutes before turning from a wire rack to awesome. Wrap in plastic material wrap and shop for 1 day.

Combine all substances with 5 ounces boiling water and combine until clean. This combination will be very runny.5 years ago

Trim cake into approximately 1″ squares and dip every one into icing, after that into coconut.

Place lamingtons on a cable rack for 1-2 hours or until dry out.

Makes about 45.

I used dessicated coconut for this recipe, only because my mom had simply brought me some over from Australia, but shredded will work equally well.

Tip: I use two forks to handle the wedding cake squares and drop them within the chocolate and the coconut. Allow chocolate drip off a little before you place it within the coconut.

I have stuffed myself with Lamintongs in HongKong and Tokyo- They are among my favorite cakes ever!

The lemon ones are really good as well, but delicious chocolate always wins =)

I didn’t understand that recipe originated from Australia! We’ve been baking them for Xmas since forever, and I believed the recipe originated from Austria/Europe, where I’m from. We place a little Rum flavour in the chocolate icing, which kicks it up a notch. Your picture makes my mouth area water. I really like them! ๐Ÿ™‚

I tasted an early on “test” of these while these were on the chilling rack – Wow! Extremely chocolately and the coconut is certainly more subtle than you might think. They are my favorite dessert whenever we travel to Sydney!

I always need to think of Australian Soaps when I hear Lamingtons mentioned anywhere. I’ve usually wanted to try them and never have got yet!
