I’m a company believer that each BBQ or party must have at least a few healthy options avaiable for guests to nosh on. No-one wants to show up and only end up being offered mayo-loaded potato salad, excessively salted poker chips, scorching dogs, cake from your grocery store and cantaloupe that likes like it’s out of a GMO factory.

Okay, maybe those are only the parties I’ve been to. Whomp whomp.

Still, it might just time and energy to step it up a notch with an outrageously good salad loaded with fresh fruit, bright greens, toasty nuts and a to die for balsamic dressing. Wouldn’t you agree?

This salad was based off a recipe we enjoyed while we were back Pensacola, Florida last November. We halted by SoGourmet following a wines and parmesan cheese tasting and the chef happy us with his famous SoChopped salad. At that time I felt as though I might in fact burst, but made a decision that a few bites of the salad was necessary to be both appreciative and elegant. After all, he do make it for all of us.

5 minutes later the complete salad was completely GONE. Tony and I actually forked our method through a huge bowlful with zero regrets. Between bites we kept asking each other, How is certainly this salad SO good?”

I thought maybe we were inside a delirious meals coma. After all, could a salad really be THAT great?

I wouldn’t know for certain until we managed to get back and I attemptedto recreate the salad myself.

Turns out We wasn’t crazy. The salad surprised us with pleasure and flavor the next time we appreciated it too, therefore of course I had developed to dub with the best fruit, parmesan cheese and nut salad name. Because.

Wanna know very well what else this salad is certainly? Versatile.

Try it with peach and blueberries. Or simply juicy strawberries. Add in a little avocado if that’s your issue. Switch up the nut products to almonds or pecans.

The Ultimate Fruits, Mozzarella cheese & Nut Salad

For the salad:

5 oz organic baby spinach or spring greens (about 1 package)

2 little organic apples, cut into thin slices

1 cup grapes, sliced up lengthwise

1/4 cup crumbled feta


In a little bowl, whisk olive oil, balsamic vinegar, garlic and dijon mustard together until smooth and well combined.

In a large dish, toss lettuce, apples and grapes jointly. Pour dressing on the fruits and lettuce and toss again to combine. Top salad with feta crumbles and toasted walnuts. Serve immediately. Salad acts 4.

This salad is most beneficial enjoyed right after it is made. If you are bringing it to a party, I recommend waiting around to add in the dressing, nut products and feta until before you serve it.
