Flourless Chocolate Chip Zucchini Oat Brownies vegan, gluten free of charge & healthy

To be honest, I sort of require a break. I’ve been working a absurd amount recently and I feel as though I want some down-time. Since I work a full period job beyond this blog, I really only have enough time to create meals for the weekends. That results in me working all the time. From Saturday morning to Sunday evening you’ll find me at Ambitious Kitchen HQ creating absurd messes which i never want to clean up.

Ugh I usually say that, don’t I?
Okay but really… can you think that 1 brownie has ONLY 86 calorie consumption and 6g of glucose? YES, it’s true.
These are made out of peanut butter, honey, applesauce, and zucchini, and guess what? The thing you flavor is chocolates and hook chewy texture from the oats. I’m quite impressed with myself.
Oh, oh, oh! These are totally gluten free cheesecake recipe free of charge; and vegan in the event that you swap maple syrup for honey and use vegan chocolate potato chips.

1/4 cup honey or agave nectar
1/2 cup unsweetened organic applesauce
1 teaspoon vanilla
1 teaspoon baking soda
1/2 cup dark chocolate chips (vegan if desired), divided
Preheat oven to 350 levels F. Spray 8×11 baking pan with nonstick cooking food spray.
Place oats in blender or meals processor and process until finely ground. Don’t worry, it generally does not have to be ideal nonetheless it should take a few minutes. Set aside.
In a big bowl of electric powered mixer, cream jointly peanut butter, applesauce, honey and vanilla until steady. Add in zucchini, cocoa natural powder, ground oats, baking soda, and salt; combine until well mixed. Gently collapse in 1/4 glass of chocolate potato chips. Pour batter into ready baking skillet and sprinkle remaining chocolate chips outrageous. Bake for 25-30 moments or until tooth pick inserted into middle arrives almost clean.
Great brownies completely in wire rack then trim into 20 squares. Enjoy!

Can I just tell you I totally understand how you feel on the whole nonstop working point? I’ve been blogging for about 8 months now and I love it but it eats up all of my free time around the weekend. It’s seriously exhausting but so difficult to give up on! Complain all you have to, I’m right here to wallow in it along with you!! ðŸ‚
These turned approximately amazingly well but I made several changes:
1) We added a 1/4C of additional sugars as the batter wasn’t very sweet.
2) We used homemade apple sauce (much less water than commercial).
3) I cooked them in muffin cups to create them easier to serve.
4) Sprinkled them with ‘pearl glucose’ to create them look good.
EVERYONE (even the non vegans) treasured these. Very gooey/dark chocolate tasting. Really a great keeper. Unlike additional ‘no-fat’ desserts, which can haver horrible structure, this one actually worked. Getting excited about trying it once again to see if I simply got lucky or it can be repeated…
These were divine!! I am an enormous enthusiast of marrying zucchini and delicious chocolate!! I have a favorite recipe I have already been making for years- Spiced Belgian Chocolate Zucchini Bread which I could replace with this formula. This is a perfect fit for my recent gluten-free & low glucose diet!! I suppose I could always add the cloves and cinnamon to give it that spiced kick, aswell!
